I missed yesterday. We were out of town.
But, I had a huge Chipolte on Friday, loaded with fresh salad Vegetables, and at night I ate a lovely stirfry also loaded with stirfried veggies.
Today we ate this salad. I call it my, "Amy Zents Mozzarella-Pickle Salad!"
It is made with bread and butter pickles, fresh mozzarella cheese, tomato and blue-cheese dressing. Very quick and easy. I also had a baked pizza and fresh turtle (walnut-carmel) cookies and we drank near-beer.
